When we began to study American kitchens, one of our first discoveries was that most are not designed to consider the human dimension. Many include unreachable cabinets and shelves. Others have areas that are difficult to access, from corners in base cabinets to cabinets located beneath sinks. Still others feature work surfaces with inadequate lighting and upper cabinets with hinged doors that are often narrow, create barriers, invite accidents, and may only be opened one at a time.
